BBQ Pork

My niece had this at her son's high school graduation party. My husband loved it & he is very picky about what he eats. She shared the recipe with me & I have fixed this several times since. My husband enjoys it every time & even eats it as leftovers.

INGREDIENTS

  • 4-5 lb. pork roast
  • 12 oz Coke
  • 1-2 onions, sliced
  • BBQ sauce:
  • 1 cup ketchup
  • 1 tbsp mustard
  • 3 tbsp Worcestershire sauce
  • 2 tbsp cider vinegar
  • 1 tbsp lemon juice
  • 3 tbsp brown sugar
  • 1 tbsp black pepper
  • PREPARATION

    Mix ingredients for bbq sauce & pour over pork roast in gallon size storage baggie. Soak in sauce overnight in refrigerator. When ready to cook, add Coke & onions & put in crock pot. Cook 4 hrs on high or 8 hrs on low.
    Make second batch of bbq sauce to serve with the pork. Remove meat & cut or tear into bite size pieces. Serve hot & enjoy. Very good when reheated also.
