Coca-Cola® Ribs

One of my all-time favorite southern classic recipes is one I have for Coca-Cola ribs. I picked this recipe up from a friend when we lived in Georgia and have used it since. The ribs turn out sweet, savory, and in Kentucky fashion- finger lick’n good! - Barb, http://webbwise.blogspot.com

INGREDIENTS

  • Beef Ribs (short ribs work best, but full ribs will turn out well, too)
  • 1-2 Two liter Bottles of Coca-Cola®
  • 1 Clove Garlic
  • 1 Onion
  • ½ Cup of Ketchup
  • 2 Tbsp. of Worcestershire
  • 2 Tbsp. of Cider Vinegar
  • ½ Tbsp Canola Oil
  • ¼ Cup Salt (If you can find Hickory Salt, it’s great to use in this recipe)
  • 1/8 Tsp. Cayenne Pepper
  • 1 Tbsp. Chili Powder
  • PREPARATION

    Put the ribs in a marinating dish or a large dish and cover with Coca-Cola® . Reserve a ½ cup of Coca-Cola® for making sauce later. Allow ribs to marinate overnight in the cola.

    Pre-heat oven to 350 degrees.

    Mix salt and chili powder. Remove ribs from cola. Dry rub ribs with salt and chili powder mixture.

    Place ribs in a baking dish (preferably a glass one.) Add one cup of water by pouring water gently around the side of the ribs. Cover baking dish with lid or foil. Bake for two hours.

    While ribs are baking, put together barbeque sauce.

    Mince onion and garlic. Heat oil in a small saucepan over a medium heat. Saute the garlic and onion until cooked.

    Stir in ketchup, Worcestershire, vinegar, cayenne, and 1/2 cup of Coca-Cola® . Simmer sauce for 15 to 20 minutes (sauce should thicken as it cooks.)

    Remove ribs from oven when finished. Baste ribs with sauce and heat for ten minutes on the grill, continuing to baste with sauce. Cook until slightly blackened.

    Remove ribs from grill, baste with sauce, serve with your favorite barbeque fix’ns, and enjoy!
