Growing up, early summer meant going with grandma to pick strawberries. We would spend hours picking them (eating them) and helping her prep and freeze them.
1/3 cup olive oil
3 tbsp red wine vinegar or balsamic vinegar
2 tsp fresh lemon juice
1 tsp freshly grated ginger
1 lb fresh spinach, stems trimmed
2 cups sliced fresh strawberries
4 ounces feta cheese
Blend oil, vinegar, lemon juice and ginger in a large bowl. Add spinach, berries and cheese; toss.
