Orange Jello Salad

My mother made this every thanksgiving and christmas. I remember this recipe by heart because of all the love she put into it. Now she has been gone 11 years & I make this recipe for my family. They all love it. Everytime I make it I think of my mom.

INGREDIENTS

  • I large container of Cool-Whip
  • I large box of orange Jello
  • I medium container of small curd cottage cheese
  • 3 large cans of chunky pineapple
  • 6 small cans of mandarin oranges
  • I can of fruit cocktail
  • I can crushed pineapple
  • I bag of colored marshmallows (Make sure you get the fruit colored marshmallows. If you don't get the right ones this will not taste the same)
  • optional- 1/2 cup of crushed pecans or walnuts
  • PREPARATION

    In a large bowl add your Cool-Whip and orange jello. Mix well until it turns orange. Then add the cottage cheese. Mix until well blended. Using a small mixing spoon add your pineapple, oranges, fruit cocktail and marshmallows.
    *Note- When it comes to the marshmallows you may choose to only use half the bag. This is totally up to you. I only use half the bag because I don't like the salad to be more marshmallows than fruit.
    Stir slowly until well blended. After you add your Orange Jello Salad into a serving bowl you may then add the optional pecans or walnuts to the top before serving.
    This will last for 6 days in the refrigerator. Sometimes it may get dry because of the marshmallows. Do not worry if this happens. Simply add in 2 cup of additional Cool-Whip and you will be good to go. This should serve (based on size of bowl) 15-20 people.
    If you want to make this for christmas mom simply changed the orange jello to red jello.
