Grandma's Pecan Tarts

Grandma’s Pecan tarts were always one of my favorite things about going to my grandparents’ house -- candy in a pie shell. When I went to college the boxes of tarts that arrived for me in the mail carried the warmth of grandma’s kitchen to my dorm room.

INGREDIENTS

  • 3 eggs
  • 1-1/4 cups blue label Karo syrup (It has to be dark Karo)
  • 1/8 tsp salt
  • 1 tsp vanilla
  • 2/3 to 1 cup chopped pecans
  • 1 pie shell (or substitute with 16 tart shells)
  • PREPARATION

    Pre-heat oven to 450°F. Mix ingredients together. Add nuts. Pour into pastry shells or piecrust. Bake at 450°F for 10 minutes, then turn heat to 350°F and continue to bake until a silver knife comes out clean when stuck into the middle of the pie.
