Artichoke-Rice Salad

My Aunt Mary brings artichoke-rice salad every year to the family reunion. It’s a great summer picnic treat, and a nice alternative to pasta salads.

INGREDIENTS

  • 2 cups uncooked rice
  • 2 7-ounce jars marinated artichoke hearts
  • 1/3 cup mayonnaise
  • 1/4 tsp curry powder (mild yellow curry)
  • 12 green olives, sliced
  • 1/2 red pepper, sliced
  • 2 green onions, sliced
  • PREPARATION

    Cook rice and cool. Drain artichoke hearts, but save liquid. Combine liquid, mayonnaise and curry, mix well. Combine all ingredients carefully and chill. Garnish with pepper slices.
