My Aunt Mary brings artichoke-rice salad every year to the family reunion. Its a great summer picnic treat, and a nice alternative to pasta salads.
INGREDIENTS
2 cups uncooked rice
2 7-ounce jars marinated artichoke hearts
1/3 cup mayonnaise
1/4 tsp curry powder (mild yellow curry)
12 green olives, sliced
1/2 red pepper, sliced
2 green onions, sliced
PREPARATION
Cook rice and cool. Drain artichoke hearts, but save liquid. Combine liquid, mayonnaise and curry, mix well. Combine all ingredients carefully and chill. Garnish with pepper slices.
