Barbecue Pork and Beans

INGREDIENTS

  • 2 one pound trimmed pork loins
  • 1 tablespoon garlic salt
  • 1 pinch black pepper
  • 1 tablespoon Cajun spice
  • Olive oil to taste
  • 1 tablespoon fine brown sugar
  • Barbecue Sauce:
  • 2 tablespoons canola oil
  • 3 tablespoons diced jalapeno
  • 2 tablespoons diced garlic
  • 3 cups ketchup
  • 1/4 cup conjure (cognac)
  • 1 cup orange juice
  • 1/2 molasses
  • 1/4 cup coca-cola
  • 1/2 cup brown sugar
  • 1 tablespoon liquid smoke
  • 1 teaspoon garlic salt
  • The Beans:
  • 2 cans navy beans
  • 1/4 pound ground dark turkey meat
  • 1 red onion diced
  • 4 cloves garlic minced
  • 1/4 molasses
  • 1 teaspoon dry mustard
  • 1 teaspoon chili powder
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons canola oil
  • PREPARATION

    Start by seasoning the pork really well all over with the garlic salt, Cajun spice and the brown sugar. Then using your hand, pat the pork with the oil. On the grill, cook for eight to twelve minutes over medium heart rotating every couple of minutes. After the pork is five minutes from done add the BBQ sauce and rotate so that the sauce sticks. Remove, slice and serve over the beans.

    BBQ Sauce:
    In a large sauce pan, add the oil. Heat the oil just a little then add the garlic, shallots, jalapeno, and saute for two minutes. Then add the remaining ingredients mix well and bring to a low simmer until sauce is combined. Check you flavor and adjust the sweetness if you like.

    The Beans:
    In a large sauce pan add the oil, onion and garlic. Next add the turkey and saute for three to five minutes. Add the beans and the remaining ingredients mix well and bring to a low simmer. Taste and serve.
